Crock-Pot: Shredded Caesar Chicken
Hello folks! Sorry for the delay in posts. I’ve been writing away for my new job and just haven’t been able to find the energy to write for the blog. Anyway, I started this one early last week but I just now got around to finishing it. So, here it is!
If you’re as obsessed with This Is Us on NBC as I am, you probably at least considered being mad at your Crock-Pot after that Superbowl Sunday episode. After all, the only reason I watched Gilmore Girls back in the day was because of Milo Ventimiglia. Now, as a grown, happily married woman, it would be ridiculous for me to admit that he’s also the reason I started watching This Is Us… Right? That would be so ridiculous… Who am I kidding? Anyway, since he’s told us that he doesn’t want us to take out our grief on Crock-Pot (and considering the fact that it’s the only way I know how to cook anyhow), I’m here to share a new recipe with you… Crock-Pot Shredded Caesar Chicken!
Crock-Pot Shredded Caesar Chicken
This is one that I came across on Pinterest. I made it for the first time last week, and it was a hit! This particular recipe makes about 6 servings, which for us is 3 lunches and 3 dinners! Ohhh I love my Crock-Pot! Easy AND affordable.
Ingredients:
Throw all of the following ingredients into the Crock-Pot:
2 pounds of boneless, skinless chicken breast
¾ Cup of your favorite Caesar dressing
1 tsp. dried parsley
1 tsp. dried basil
A dash of salt and pepper
Cook on high for about 5 hours.
Pour out excess liquid and shred chicken.
How to Eat it:
- You can eat this shredded chicken in a salad with some crisp romaine, croutons and caesar dressing.
- You can do what we did and toss some chicken, shredded Italian cheese, shredded lettuce, and extra caesar dressing into a wrap and eat it as a sandwich!
It will be delicious either way… trust me! I’m so glad that I listened to Milo. Try it out and let me know what you think! I have another recipe coming at you soon! 😉
