4-Ingredient Taco Stuffed-Peppers

GUYS. New favorite recipe alert! While “low-carb anything” doesn’t usually appeal to me, because hello, bread… these 4-ingredient taco stuffed-peppers are the BOMB. Not only do they taste delicious, but they’re so stinkin’ simple to make.

Here’s what you need:

Shopping List

  • 1 pound of lean ground beef or turkey
  • 1 packet of taco seasoning
  • 3 bell peppers
  • 8 oz. packet of shredded taco cheese

How to Make em’

First, you’ll want to wash the peppers and then cut them in half from top to bottom. Clean out all of the seeds. Place them in a casserole dish or on a cookie sheet.

You can preheat the oven to 375 while you prepare the taco meat. I make mine with 93/7 (lean) ground beef, but you can feel free to use ground turkey. Brown the meat and follow the directions on the back of the taco seasoning packet.

Once the meat is ready, sprinkle a little salt & pepper on the peppers and then spoon a generous helping of meat into each pepper cup.

Sprinkle a little (or in my case, a lot) of shredded cheese on top.

Place them in the oven, uncovered, for 10 minutes. Remove and enjoy!

Just look at them! Don’t they look delicious?! Yeah, I know… this is more than 3 peppers. It’s actually 6, but it lasts the two of us 3 nights, which is 2 extra nights that I won’t have to cook dinner, sooo it’s a win 🙂

Every time I used to make tacos, I would want shredded chicken and Mike would want ground beef. These taco stuffed-peppers have bridged the divide, because they’re just… SO. GOOD. You must try them.

I know it’s been a little while since my last post, and I know I keep saying that I’m going to stay consistent, but life gets chaotic. I can’t tell you when, but the next one up is going to be an exciting new workout! 😉
